The story

Dan dan noodles are named for the dan, the bamboo shoulder pole street hawkers used to carry noodles and sauce. A popular account says a vendor nicknamed Chen Baobao began selling them this way in 1841 in Zigong, a salt-mining town in southern Sichuan, and later opened a shop. The noodles then spread to Chengdu, the provincial capital, where cooks added minced pork and created the version known today, with chilli oil, Sichuan pepper and preserved vegetables, so Chengdu is often named as their home too. They later travelled to Hong Kong and Japan, where soupier versions such as tantanmen developed.

Rival claims

Chengdu (Wikipedia gives Chengdu; Michelin Guide and China Daily tell the Zigong story of hawker Chen Baobao, 1841, with the dish later refined in Chengdu). Chengdu already has Kung Pao chicken.

Also known as 担担面, dandan mian, dandan noodles, tantanmen.
